I just used the recipe on the back of the bottle (with a few omissions).&lt;br /&gt;&lt;br /&gt;Prep Time: 20 minutes&lt;br /&gt;Total Time: 20 minutes&lt;br /&gt;Makes: 6 servings (1 cup)&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;Ingredients:&lt;br /&gt;2 tablespoons Wesson® Vegetable Oil, divided&lt;br /&gt;1 small onion, chopped &lt;span style="color: rgb(102, 0, 204);"&gt;No onions- allergic&lt;/span&gt;&lt;br /&gt;1 large red bell pepper, seeded, cut into 3/4-inch chunks&lt;br /&gt;1 pound boneless, skinless chicken breast or thighs, sliced into 2 x 1/2-inch slices&lt;br /&gt;1 can (8 ounces) La Choy® Bamboo Shoots, drained &lt;span style="color: rgb(102, 0, 204);"&gt;Left these out- not sure if my family would eat them.&lt;/span&gt;&lt;br /&gt;1 can (20 ounces) pineapple chunks, drained&lt;br /&gt;1 jar (10 ounces) La Choy Sweet &amp;amp; Sour Sauce- Gluten Free&lt;br /&gt;1 tablespoon La Choy Soy Sauce-Gluten Free&lt;br /&gt;1 tablespoon cornstarch&lt;br /&gt;1 tablespoon water&lt;br /&gt;La Choy Chow Mein Noodles (optional)&lt;span style="color: rgb(102, 0, 204);"&gt; Instead of noodles I served it on top of rice.&lt;/span&gt;&lt;br /&gt;&lt;br /&gt;Directions:&lt;br /&gt;1. Heat 1 tablespoon oil in large skillet or wok over high heat. Cook and stir onion and red bell pepper about 2 minutes, or until crisp-tender. Remove from skillet; set aside.&lt;br /&gt;&lt;br /&gt;2. Pour remaining 1 tablespoon oil into skillet. Cook and stir chicken about 4 minutes or until no longer pink. Add onion and bell pepper back to skillet. Stir in bamboo shoots and pineapple chunks.&lt;br /&gt;&lt;br /&gt;3. Combine sweet &amp;amp; sour sauce and soy sauce in small bowl; add to skillet. Stir together cornstarch and water until smooth; add to skillet. Cook until heated through and sauce thickens, stirring occasionally, about 1 minute. I love banana bread and have missed baking it. I cannot remember where I got it... so forgive me to the originator of this recipe. It is very good!&lt;br /&gt;&lt;br /&gt;Gluten Free/Dairy Free Banana Bread&lt;br /&gt;&lt;br /&gt;Ingredients &lt;/div&gt; &lt;div class="yum_recipeIngredients"&gt; 2 cups white rice flour&lt;br /&gt;1 1/2 tsp. baking powder&lt;br /&gt;1/2 tsp. baking soda&lt;br /&gt;1/4 tsp. salt&lt;br /&gt;1/2 tsp. ground cinnamon&lt;br /&gt;1/4 tsp. ground nutmeg&lt;br /&gt;2 eggs, beaten&lt;br /&gt;1 1/2 cups mashed, ripe bananas (about 4)&lt;br /&gt;1 cup vanilla infused sugar (I just add 1/4 tsp of vanilla to the sugar and mix it up.)&lt;br /&gt;1/2 cup vegetable oil&lt;br /&gt;&lt;br /&gt;&lt;/div&gt; &lt;div class="yum_recipeHeading"&gt; Directions &lt;/div&gt; &lt;div class="yum_recipeDirections"&gt; Preheat oven to 350F. Spray medium bread pan with nonstick cooking spray  or grease with oil. Combine dry ingredients in a  large bowl and then make a well in the center. Add eggs, banana, sugar,  and oil to the center and combine them before folding into the rest of  the dry ingredients. Pour into your bread pan. I had tried some almond milk that was the Silk brand, but I did not like the texture.&lt;br /&gt;&lt;br /&gt;This almond milk is free of soy, lactose, gluten, dairy, and many other things. I went for almonds instead of soy because of the amount of estrogen/ hormones  that are in soy.&lt;br /&gt;&lt;br /&gt;I have tried the original in the Silk brand. It was ok, but the almond taste/smell was strong to me. I drink the vanilla! It has been a long journey! But I am finally getting things more under control.&lt;br /&gt;&lt;br /&gt;Just as I was figuring out the gluten thing... I now have to give up dairy! Not easy, but I am surviving. I have been searching the web for good blogs with recipes and not finding a lot that have family friendly recipes. They have great things that we would not eat... so I am going to be more diligent in posting on this blog. One to keep my recipes together and two I want to help out other people like me who have to be gluten and dairy free. I will post things I find and try or things I make up on my own!&lt;br /&gt;&lt;br /&gt;I also will be posting gluten free/dairy free foods that I have purchased and enjoy. We have lots of gluten in our house, but I was able to find things that were safe to eat.&lt;br /&gt;Last night I made a quick improvise and it was really good- to me anyway (my husband liked it too). I had planned on making pizza- yum!! But none for me... So I found our corn tortilla chips (which are gluten free) and came up with the following recipe:&lt;br /&gt;&lt;br /&gt;Pizza Nachos&lt;br /&gt;corn tortilla chips&lt;br /&gt;mozzarella cheese&lt;br /&gt;bell pepper&lt;br /&gt;pizza sauce (checked the ingredients and it was gluten free)&lt;br /&gt;pepperoni (also was gluten free- the kind I had)&lt;br /&gt;**You can add any topping**&lt;br /&gt;&lt;br /&gt;In an oven safe dish- spray with PAM (gluten free). Layer chips on the bottom, pour pizza sauce over the chips, and add other toppings. Go &lt;a href="http://www.5dollardinners.com/2009/04/mexican-chicken-skillet.html"&gt;here&lt;/a&gt; to see the original post.&lt;br /&gt;&lt;br /&gt;Ingredients&lt;br /&gt;1 cup black beans ($.40)- I used canned to save time!&lt;br /&gt;1 cup white rice ($.20)&lt;br /&gt;1 15 oz can diced tomatoes and green chiles ($.50)&lt;br /&gt;2 cups frozen corn ($.44) On sale last week for $.88/bag&lt;br /&gt;1/2 onion, chopped ($.15)&lt;br /&gt;2 cups leftover shredded chicken ($2)&lt;br /&gt;1 tsp ground cumin ($.05)&lt;br /&gt;1 tsp garlic powder ($.03)&lt;br /&gt;Salt/Pepper&lt;br /&gt;2-4 oz shredded cheddar cheese ($.65) On sale for $1.25/8 oz this week!!!&lt;br /&gt;Couple Handfuls of Tortilla chips ($.50)&lt;br /&gt;&lt;br /&gt;Directions&lt;br /&gt;1. Soak 1 cup of black beans overnight, or for at least 2 hours in HOT water.  Drain and rinse.  Add to saucepan with at least 2 inches of water covering the beans.  Bring to a boil.  Reduce heat to medium and cover.  Cook for about an hour and a half.  (You could substitute 2 cans of black beans, but they are not as healthy nor as frugal as cooking your own!)&lt;br /&gt;2. Cook 1 cup of white rice.&lt;br /&gt;3. In large skillet, add diced tomatoes, 2 cups frozen corn, chopped onion, shredded chicken, ground cumin, garlic powder, salt and pepper.  Turn on medium low heat and cook for about 15 minutes while rice is cooking.&lt;br /&gt;4. Once rice and black beans are finished cooking, add to the skillet with the chicken mixture.   Cook for about 10 minutes, giving the flavors time to mix and mingle in the skillet!&lt;br /&gt;5. Shred 2-4 oz. of favorite cheddar cheese.  Stir into the casserole.  (Omit if GFCFSF or casein free!)  Season with salt and pepper to taste.&lt;br /&gt;6. Serve Mexican Chicken Skillet. I wish I had taken a picture of it... maybe next time.&lt;br /&gt;&lt;br /&gt;Prep: 11 minutes Cook: 25 minutes&lt;br /&gt;&lt;br /&gt;1 (16 oz) can refried beans&lt;br /&gt;1 tsp chili powder&lt;br /&gt;1/2 tsp ground cumin&lt;br /&gt;8 (8 inch) flour tortillas&lt;br /&gt;1 cup chunky salsa&lt;br /&gt; 2 (4 or 6 ounce) cartons guacamole&lt;br /&gt;1 (8 ounce) package of shredded Mexican Cheese blend&lt;br /&gt;&lt;br /&gt;Garnish: sour cream, additional salsa, or guacamole-- we ate ours with some scoops- for added crunch!&lt;br /&gt;&lt;br /&gt;Combine first 3 ingredients; stir well.&lt;br /&gt;&lt;br /&gt;Place 1 tortilla in a lightly greased 9 inch round cake pan; spread with half of the bean mixture, and top with another tortilla. Spread with half of the salsa, and top with another tortilla. Spread with half of guacamole, and top with another tortilla. Sprinkle with half of shredded cheese, and top with another tortilla.&lt;br /&gt;&lt;br /&gt;Repeat layers with remaining ingredients, except cheese. (Pan will be full.) Cover and bake at 350 for 20 minutes; uncover and sprinkle with remaining cheese. Bake, uncovered, 3 to 5 more minutes. What I did for times sake was to use canned corn and I cooked the chicken in a skillet. I browned the chicken cutting it into pieces and added some BBQ sauce after it was no longer pink.&lt;br /&gt;Spread BBQ sauce over the pizza crust; sprinkle with the drained corn, chicken pieces, black beans, and cheese. Preheat oven to 350 degrees F (175 degrees C).&lt;br /&gt;  2. In a large bowl, mix sour cream, salsa, cream of chicken soup, onion and chili beans.&lt;br /&gt;  3. Layer the bottom of a 9x13 inch baking dish with 1/3 tortilla strips. Top with 1/3 chicken, 1/3 sour cream mixture and 1/3 Cheddar cheese. Repeat layering with remaining ingredients.&lt;br /&gt;  4. Bake in the preheated oven 20 to 30 minutes, or until golden and bubbly. Let stand about 10 minutes, or as long as you can stand it!!! It was good- a little spicy (depending on the Salsa Verde that you get).&lt;br /&gt;&lt;br /&gt;Ingredients&lt;br /&gt;1 tablespoon extra virgin olive oil&lt;br /&gt;1 cup chopped onion&lt;br /&gt;1 cup chopped celery&lt;br /&gt;2 tablespoons minced garlic&lt;br /&gt;1 cup chopped carrots&lt;br /&gt;1 pound chicken breasts, shredded, boneless, skinless&lt;br /&gt;2 cups chopped zucchini&lt;br /&gt;1/2 cup brown rice (not instant)&lt;br /&gt;2 1/2 cups low sodium chicken stock&lt;br /&gt;2 (4 ounce) cans mild Mexican green chiles, drained&lt;br /&gt;1/4 teaspoon cumin&lt;br /&gt;2 (15.8 ounce) cans BUSH’S® Great Northern Beans, with liquid&lt;br /&gt;1 tablespoon chopped oregano&lt;br /&gt;1 tablespoon chopped parsley&lt;br /&gt;Salt and black pepper to taste&lt;br /&gt;Shredded Colby-Monterey Jack cheese, to taste&lt;br /&gt;Green salsa verde, to taste&lt;br /&gt;&lt;br /&gt;Directions&lt;br /&gt;&lt;br /&gt;1. Heat olive oil over medium heat in a medium saute pan. Add onions, celery, and garlic. Cook until garlic is aromatic, approximately 5 minutes.&lt;br /&gt;2. Place carrots in bottom of slow cooker. Top with chicken, onions, celery and garlic mixture.&lt;br /&gt;3. Add zucchini, rice, chicken stock, chiles, cumin, and beans.&lt;br /&gt;4. Cook in 4-quart slow cooker on high setting for 4 hours or until vegetables and chicken are tender.&lt;br /&gt;5. Add oregano and parsley. Cook for 5 minutes. Adjust seasoning with salt and pepper. YUM!!&lt;br /&gt;&lt;br /&gt;1 box (1 lb 2.3 oz) Betty Crocker® fudge brownie mix&lt;br /&gt;1/2 cup vegetable oil&lt;br /&gt;1/4 cup water&lt;br /&gt;2 eggs&lt;br /&gt;1 1/4 cups white vanilla baking chips&lt;br /&gt;1 1/2 teaspoons shortening&lt;br /&gt;24 Hershey®'s Hugs® chocolates, unwrapped&lt;br /&gt;&lt;br /&gt;1. Heat oven to 350ºF. Grease bottom only of 9-inch springform pan with shortening or cooking spray. In medium bowl, stir brownie mix, oil, water, eggs and 1 cup of the white baking chips about 50 strokes with spoon or until well blended. Spread in pan.&lt;br /&gt;2. Bake 35 to 40 minutes or until toothpick inserted 2 inches from side of pan comes out clean or almost clean. Immediately place chocolate candies around edge of brownie. Cool completely, about 1 hour. Remove side of pan.&lt;br /&gt;3. In small resealable food-storage plastic bag, place remaining 1/4 cup white vanilla baking chips and the shortening; seal bag. Hollow out, reserving the pulp. Chop pulp into chunks; set aside. In medium skillet, heat butter. Add green onions and bell pepper and cook over medium-high heat until tender. Add corn, vinegar, tomato pulp, cilantro, and garlic salt; mix well. Heat 5 minutes or until flavors are blended. Place tomato shells in baking dish and heat on 350 for 5 minutes. It helped with all the flavors.&lt;br /&gt;&lt;br /&gt;Taco Soup&lt;br /&gt;&lt;br /&gt;1 1/2 lbs ground beef&lt;br /&gt;1 cup chopped red onion (I left it out- allergies)&lt;br /&gt;1 (1.25oz) package taco seasoning mix&lt;br /&gt;1 (1 oz) envelope Ranch-style dressing mix&lt;br /&gt;2 (15.25 oz) cans whole kernel corn, undrained&lt;br /&gt;1 (16 oz) can pinto beans, undrained&lt;br /&gt;1 (15 oz) can black beans, undrained&lt;br /&gt;2 (10 oz) cans chili-style diced tomatoes with green chiles, undrained&lt;br /&gt;1 (12 oz) can light beer&lt;br /&gt;1 1/2 cups water.&lt;br /&gt;Toppings: shredded Cheddar cheese, sour cream, tortilla chips, cilantro&lt;br /&gt;&lt;br /&gt;1. Cook beef and onion in a large skillet over medium high heat, stirring until meat crumbles and in no longer pink; drain.&lt;br /&gt;2. Preheat oven to 200°F.&lt;br /&gt;&lt;br /&gt;2. Mix applesauce and cinnamon with hands in small bowl until a smooth ball of dough is formed. Bring to a boil, then cook over medium heat until potatoes are tender, about 10 to 15 minutes. Stir in the chicken bouillon, salt and pepper.&lt;br /&gt;In a separate saucepan, melt butter over medium-low heat. Combine chopped chicken, red pepper, broccoli, and pressed garlic. Combine dill mix, salt, and mayo. Place mayonnaise mixture and cheese in the chicken combination. Mix gently and thoroughly.&lt;br /&gt;Place crescent rolls covering 12x15 stone. Cut 8 strips on each side of dough leaving a middle base for the filling. Place filling in the middle of dough and lift each strip and twist and place over the filling mixture. Brush with egg white and bake for 25-28 minutes (it should be golden brown).&lt;br /&gt;&lt;br /&gt;[Those directions sound complicated, but all you are doing is laying the crescent rolls out- make sure that they are still together and roll them to get rid of the lines. Then cut strips along the sides, put the mixture down the middle and fold the sides over the top. You can be as fancy or plain as you like. It is best not to overlap the braid too much on the top or you will have to cook it longer so that the dough is fully cooked. I always make mine on my baking stone. In large bowl combine peanut butter, sugars, butter, shortening, and egg. Beat at medium speed until light and fluffy. Add flour, baking soda, and salt. Beat at low speed until soft dough forms. Stir in chips.&lt;br /&gt;&lt;br /&gt;Shape dough into 1-inch balls. Place balls 2 inches apart on ungreased cookie sheets. Flatten balls with fork in crisscross pattern. It gives you a chance to have a variety of goodies around for people who might come and visit your home. This is the "cookie" that I am going to make this year. I always try a new recipe- which is not always a good idea. I let my husband pick the cookie... so we shall see how these turn out!&lt;br /&gt;&lt;/div&gt;&lt;div&gt;&lt;br /&gt;&lt;/div&gt;Chocolate Swirls&lt;br /&gt;&lt;br /&gt;½ cup granulated sugar&lt;br /&gt;½ cup packed brown sugar&lt;br /&gt;½ cup butter or margarine, softened&lt;br /&gt;1 pkg (3 oz) cream cheese, softened&lt;br /&gt;1 egg&lt;br /&gt;1 tsp vanilla&lt;br /&gt;2 cups all-purpose flour&lt;br /&gt;½ tsp baking powder&lt;br /&gt;¼ tsp salt&lt;br /&gt;1 cup semisweet chocolate chips, melted and slightly cooled&lt;br /&gt;&lt;br /&gt;Makes: 4 dozen cookies&lt;br /&gt;&lt;br /&gt;Heat oven to 350. In a large mixing bowl, combine sugars, butter, cream cheese, egg, and vanilla. Beat at medium speed of electric mixer until light and fluffy. Add flour, baking powder, and salt. Beat at low speed until soft dough forms. Fold melted chips into dough until lightly marbled. (Do not over mix.)&lt;br /&gt;&lt;br /&gt;Drop dough by heaping teaspoons 2 inches apart onto &lt;span class="blsp-spelling-error" id="SPELLING_ERROR_0"&gt;ungreased&lt;/span&gt; cookie sheets. Bake 10 to 12 minutes, or until edges are light golden brown. Melt butter; mix with crackers crumbs. Place cracker mixture on top of chicken mixture. Top with poppy seeds. Preheat oven 425. Cut up peppers into 1/2 inch thick strips. Cut onion into 1/2 inch wedges. Cut chicken into strips.&lt;/div&gt;&lt;div&gt;2. Unroll both packages of pizza dough and arrange side by side on a baking stone and shape it into a circle.&lt;/div&gt;&lt;div&gt;3. Heat skillet over high heat. Add 1/2 tsp of oil and chicken; stir-fry 2-3 minutes or until chicken is not longer pink. Remove from skillet. Add remaining oil, bell pepper, onion, and seasoning  to skillet. Press garlic and stir-fry 1-2 minutes or until veggies are crisp-tender. Remove skillet from heat; stir in chicken and salsa.&lt;/div&gt;&lt;div&gt;4. Sprinkle half of the cheese evenly over the crust. Arrange chicken mixture over cheese. Sprinkle remaining cheese over the chicken mixture. I always add extra cheese on top!&lt;/div&gt;&lt;div&gt;5. Bake 18-22 minutes or until crust is golden brown. So here are two of my favorites!&lt;/div&gt;&lt;div&gt;&lt;br /&gt;&lt;/div&gt;&lt;span class="Apple-style-span" style="font-weight: bold;"&gt;&lt;div style="text-align: center;"&gt;Chicken Vegetable Alfredo Soup&lt;br /&gt;&lt;/div&gt;&lt;/span&gt;&lt;div&gt;&lt;br /&gt;&lt;div&gt;1 cup chopped broccoli&lt;/div&gt;&lt;div&gt;1/2 cup chopped carrots&lt;/div&gt;&lt;div&gt;1/2 cup chopped onions (I leave this out-allergies)&lt;/div&gt;&lt;div&gt;1/2 cup diced red bell pepper&lt;/div&gt;&lt;div&gt;1 garlic clove, pressed&lt;/div&gt;&lt;div&gt;1 can (14-14.5 ounces) chicken broth&lt;/div&gt;&lt;div&gt;2 cups diced cooked chicken&lt;/div&gt;&lt;div&gt;1 tbsp snipped basil&lt;/div&gt;&lt;div&gt;1 jar (16 ounces) Alfredo sauce&lt;/div&gt;&lt;div&gt;Grated fresh Parmesan cheese&lt;/div&gt;&lt;div&gt;&lt;br /&gt;&lt;/div&gt;&lt;div&gt;What to do:&lt;/div&gt;&lt;div&gt;1. Chop broccoli, carrots, and onion. Dice the bell pepper. Place broccoli, carrots, onion, bell pepper, and garlic in a saucepan. Add broth; bring to a boil. Cover; reduce heat and simmer uncovered, 5 minutes or until vegetables are crisp-tender.&lt;/div&gt;&lt;div&gt;&lt;br /&gt;&lt;/div&gt;&lt;div&gt;2. Meanwhile, dice chicken and snip the basil; set aside. Add chicken and Alfredo sauce to broth; simmer 5 minutes or until heated through. Remove from heat; stir basil into soup.&lt;/div&gt;&lt;div&gt;&lt;br /&gt;&lt;/div&gt;&lt;div&gt;3. If desired, ladle soup into bread bowls; sprinkle with cheese.&lt;/div&gt;&lt;div&gt;&lt;br /&gt;&lt;/div&gt;&lt;div&gt;Yield: 4 servings(about 5 1/2 cups)&lt;/div&gt;&lt;div&gt;&lt;br /&gt;&lt;/div&gt;&lt;div&gt;I will give a bread bowl recipe later. &lt;/div&gt;&lt;div&gt;&lt;br /&gt;&lt;/div&gt;&lt;div&gt;&lt;br /&gt;&lt;/div&gt;&lt;div style="text-align: center;"&gt;&lt;span class="Apple-style-span" style="font-weight: bold;"&gt;Slow Cooker Chicken and Wild Rice Soup&lt;/span&gt;&lt;/div&gt;&lt;div style="text-align: center;"&gt;&lt;span class="Apple-style-span" style="font-weight: bold;"&gt;Southern Living Slow-Cooker Cookbook&lt;/span&gt;&lt;/div&gt;&lt;div style="text-align: center;"&gt;&lt;span class="Apple-style-span" style="font-weight: bold;"&gt;&lt;br /&gt;&lt;/span&gt;&lt;/div&gt;&lt;div style="text-align: left;"&gt;2 tbsp butter&lt;/div&gt;&lt;div style="text-align: left;"&gt;3 celery ribs, thinly sliced&lt;/div&gt;&lt;div style="text-align: left;"&gt;1 medium onion, chopped&lt;/div&gt;&lt;div style="text-align: left;"&gt;1 (8 oz) package sliced fresh baby portobello mushrooms&lt;/div&gt;&lt;div style="text-align: left;"&gt;2 tsp minced garlic&lt;/div&gt;&lt;div style="text-align: left;"&gt;2 (14 ounce) cans roasted garlic-flavored chicken broth &lt;span class="Apple-style-span" style="font-weight: bold;"&gt;(I could not find this last time I made the soup- so I used regular chicken broth and added some garlic)&lt;/span&gt;&lt;/div&gt;&lt;div style="text-align: left;"&gt;3 (6 ounce) packages roasted chicken breast chunks &lt;span class="Apple-style-span" style="font-weight: bold;"&gt;(I just cooked some chicken breast and cut it up)&lt;/span&gt;&lt;/div&gt;&lt;div style="text-align: left;"&gt;1 1/2 cups frozen whole kernel corn, thawed and drained&lt;/div&gt;&lt;div style="text-align: left;"&gt;1 (8 ounce) can sliced water chestnuts, drained&lt;/div&gt;&lt;div style="text-align: left;"&gt;1 cup uncooked wild rice&lt;/div&gt;&lt;div style="text-align: left;"&gt;1 tsp salt&lt;/div&gt;&lt;div style="text-align: left;"&gt;3/4 tsp ground pepper&lt;/div&gt;&lt;div style="text-align: left;"&gt;2 cups whipping cream&lt;/div&gt;&lt;div style="text-align: left;"&gt;&lt;br /&gt;&lt;/div&gt;&lt;div&gt;What to do:&lt;/div&gt;&lt;div&gt;1. Melt butter in skillet over medium-high heat. Add celery and onion; cook 4 minutes or until almost tender. Add mushrooms and garlic; cook 2 minutes.&lt;/div&gt;&lt;div&gt;2. Combine mushroom mixture, broth, and next 6 ingredients in a 5-quart slow cooker.&lt;/div&gt;&lt;div&gt;3. Cover and cook on low 5 to 6 hours or until rice is tender. For marinade, combine soy sauce and brown sugar in a bowl. Finely chop ginger-root, garlic pressed and oil in the bowl and mix well. Reserve 1/2 cup and set aside.  For kebabs, cut pork into 24 1 1/4 inch pieces. Add pork to marinade and toss to coat. Cover; refrigerate 30 minutes.&lt;/div&gt;&lt;div&gt;&lt;br /&gt;&lt;/div&gt;&lt;div&gt;2. Cut bell peppers into 24 , 1 inch pieces. Cut pineapple into quarters to make 12 pieces. Add 1 tsp of oil to skillet; heat over medium heat 1-3 minutes or until simmering. Meanwhile, drain corn; pat dry with paper towel. Add corn to skillet in a single layer. Cook without stirring 5 minutes or until caramelized on one side. Remove corn from skillet and set aside.&lt;/div&gt;&lt;div&gt;&lt;br /&gt;&lt;/div&gt;&lt;div&gt;2. As corn cooks, cut chicken into 1 inch pieces. Combine chicken and seasoning mix in a bowl. Add chicken to skillet. Cook over medium-high heat 5-7 minutes or until center of chicken is no longer pink, stirring occasionally. Remove chicken from skillet and set aside.&lt;/div&gt;&lt;div&gt;&lt;br /&gt;&lt;/div&gt;&lt;div&gt;3. Add remaining 1 tbsp oil to skillet. Add rice; stir until well coated with oil. Add broth and salsa; bring to a simmer over medium-high heat. Cover skillet; reduce heat to low. Simmer 5 minutes or until most of the liquid is absorbed. for trying new recipes so here is one I came across in the Spring/Summer 2008 Season's Best- The Pampered Chef cookbook: &lt;span class="Apple-style-span" style="font-weight: bold;"&gt;Deluxe Cheeseburger Salad&lt;/span&gt; &lt;div&gt;&lt;br /&gt;&lt;/div&gt;&lt;div&gt;Ingredients:&lt;/div&gt;&lt;div&gt;4 sesame seed hamburger bun tops&lt;/div&gt;&lt;div&gt;1 small red onion divided (I will not be using this-allergic to onions)&lt;/div&gt;&lt;div&gt;2 plum tomatoes&lt;/div&gt;&lt;div&gt;3/4 lb 95% lean ground beef&lt;/div&gt;&lt;div&gt;1/2 cup finely diced dill pickles&lt;/div&gt;&lt;div&gt;3/4 cup ketchup&lt;/div&gt;&lt;div&gt;1 tbsp yellow mustard&lt;/div&gt;&lt;div&gt;8 cups thinly sliced romaine lettuce&lt;/div&gt;&lt;div&gt;1 cup shredded cheddar cheese&lt;/div&gt;&lt;div&gt;&lt;br /&gt;&lt;/div&gt;&lt;div&gt;What to do:&lt;/div&gt;&lt;div&gt;1. preheat oven 425- slice bun tops into 1/4 inch strips and bake 8-10 minutes&lt;/div&gt;&lt;div&gt;2. slice onions and cut tomatoes into quarters lengthwise and slice crosswise&lt;/div&gt;&lt;div&gt;3. cook ground beef until no longer pink, breaking it into crumbs&lt;/div&gt;&lt;div&gt;4. in a bowl combine onion, pickles, ketchup, and mustard- add the cooked beef to the bowl and mix well&lt;/div&gt;&lt;div&gt;5. To serve- arrange the lettuce on a large platter. Spoon the beef mixture over lettuce. Top with cheese, tomatoes, and sliced onion. Arrange the hamburger buns around the edge of the platter. Crumble cranberry sauce on top of the chicken. Pour dressing over all of the chicken. Bake at 350 for 1 hour.&lt;/div&gt;&lt;div&gt;&lt;br /&gt;&lt;/div&gt;&lt;div&gt;This is very easy and so good. I am not a huge fan of cranberries or Catalina, but I LOVE this dish. The flavors combine and make it delicious. I will be sharing some recipes that I will be making this week in another post. &lt;div&gt;&lt;br /&gt;&lt;div&gt;&lt;span class="Apple-style-span" style="font-weight: bold;"&gt;Meal Plan Idea&lt;/span&gt;&lt;/div&gt;&lt;div&gt;I do enjoy cooking. I find it easiest to make a calendar for the month. I know that seems like a long time, but I would rather get it out of the way! I make the calendar, then I write on it what we will eat each night. I have my list ready and write down ingredients that I will need for each recipe and then shop every two weeks ( I actually make up two lists one for the first two weeks and the other for the rest). With two little ones it is hard to fit them and everything in the cart!&lt;/div&gt;&lt;div&gt;&lt;br /&gt;&lt;/div&gt;&lt;div&gt;It is the easiest way I have found to stay organized, know what we are eating head of time, and look forward to cooking instead of staring at the refrigerator hoping something will jump out at me!&lt;/div&gt;&lt;div&gt;&lt;br /&gt;&lt;/div&gt;&lt;div&gt;Click &lt;a href="http://www.indefenseofthefaith.org/pdf/sept_menu.pdf"&gt;HERE&lt;/a&gt; for my September Menu.
